Ginger Coconut Cookies

On the markets of Madagascar, pineapple and monkey bread, coconut and ginger are piled up. The sent of pepper, cloves, cinnamon and vanilla is in the air. Try these recipe, it's easy to make. 

What you need:

100g coconut oil
1 cup coconut sugar
1/2 cup desiccated coconut
1/2 cup thread coconut
1/2 cup buckwheat flour
1/2 cups coconut flour
2 tsp ground ginger
pinch salt

1 tsp baking soda
2 tbsp boiling water

1 tbsp pure maple syrup

How you make it:

1. Preheat the oven to 170ºC and line two baking trays with baking paper or silicone baking sheets.

2. Gently melt the coconut oil. Combine it with the coconut sugar in a large mixing bowl. Add the buckwheat and coconut flours, ginger and salt, and stir to combine.

3. Mix the baking soda with the boiling water in a small bowl, add the maple syrup and then combine with the dry mixture. Stir well to combine.

4. Shape the mixture into small balls and then press them into a flat cookie shape on the lined trays. Leave approximately 5cm between each cookie to allow for spreading. Bake in the preheated oven for 20 minutes.
